THE PROCESS

 

The impressive taste and innovative shape of fabricated potato chips have fostered an exponential worldwide growth in consumer demand for this type of product.
Over many years, Pavan has developed a complete process system for the fabrication of stackable chip which is technologically sound and able to produce a first rate product.

 

 

The raw materials, mainly consisting of potato based ingredients (granules, flakes, potato flour and modified starches), are blended and introduced into the mixing tank by means of gravimetric dosers.
The hydration liquid, where the minor ingredients such as salt, glucose, etc. are dissolved, is injected into the same tank at a constant ratio to the solids ingredients.
The homogenously hydrated dough is then transferred to a multi-rolls sheeting system where a continuous sheet is formed and calibrated to the desired thickness. The chips are then cut from the sheet and the scrap web is cut and returned to the mixing tank for rework.
The properly oriented chips are transferred to the frying section where the dough moisture is evaporated and the product takes on an expanded and crunchy structure. The uniform single curve shape is achieved thanks to the use of a special conveyor that maintains the chips in the required shape during frying. Upon discharge from the fryer, a dispensing system applies seasoning onto the chips.
In the packaging section, the chips are stacked on each other into continuous rows. A set of volumetric loading devices creates the stacks which are introduced into cans. A seamer seals the can and injects an inert gas to improve the shelf life of the fabricated potato chips.
The packaging may be customized: can, tray; flow-pack, etc.

 

 

RAW MATERIALS BLENDING

This unit is used to achieve a precise dosing of the raw materials before their mixing.


Technical and construction features:

- Stainless steel container

- Vibrating bottom plate in stainless steel

- Weighing system with an electronic programmable unit that allows the automatic management of various dosing recipes.

 

 

FLOUR MIXER


The mixer is able to guarantee an excellent mixing also in case of raw materials with different specific weight and the storage tank allows to continuously supply a processing line located downstream.


Technical and construction features:

- Horizontal mixing tank in stainless steel.

- Storage tank in stainless steel with vibrating extraction system

 

DOSING & MIXING SECTION

 

DOSER & DOUGH MIXER


This piece of equipment is used to produce, with a continuous and automatic process, a mixture based on flours and starches from cereals and tubers. Solid and liquid ingredients are mixed by intense shaking in order to obtain a homogeneously hydrated dough.


Technical and construction features:

- Flour buffer made of stainless steel

- Gravimetric type flour doser

- Two mixers, each composed of one pair of counterrotating shafts in a stainless steel body. The shafts can be easily disassembled for cleaning and maintenance purposes.

 

 

METAL DETECTOR


This unit is used to achieve a precise dosing of the raw materials before their mixing.


Technical and construction features:

- Belt conveyor with a stainless steel structure and a plastic belt

- Detector for ferrous and non-ferrous metals

 

FORMING SECTION

 

SHEETING ROLLS


The sheeting unit processes the mixture into a continuous and calibrated sheet with the desired thickness.


Technical and construction features:

- One pair of rools in chrome plated steel

- Cooling circuit working with cold water in the roll.

- Manually operated device for the micrometric adjustment of roll clearance.

 

 

CUTTING SYSTEM


This unit performs the cutting of the humid dough sheet into the required shape and scraps regrinding for their rework.


Sheet conveying belt features:

- Built in plastic material and driven by a rubber coated roll

Cutting roll features:

- Roll consisting of round interchangeable sectors divided in 6 parts

- Made of plastic material with high mechanical resistance

- Adjustment position by means of air piston

Scraps recovery system features:

- Belt in plastic material to detach the scraps from the main conveyor belt

- Hammer mill in stainless steel used to mince the scraps

FLAVOURING SECTION

 

FLAVOURING SYSTEM


In this unit, the chips are dried from the frying oil in the deoiling belt. Then, the dispensing system applies the desidered flavour onto the chips. At the end, the flipping system prepares the chips for the packaging section.

- Volumetric doser for the flavour

- Conveying chute and vibrating sieves

- Collection system for seasoning in excess
